1 c all-purpose flour
2 T. cornstarch
1/2 c. sugar
1/2 t. salt
1/2 c. salad oil
1/2 c. egg whites (about 4 eggs worth)
1 T. Water
2 T. Vanilla
Prepare "fortunes" or love notes - approximately 1" x 3"

Mix all dry ingredients together. Add oil and egg whites, beating until smooth. Beat in water and vanilla. Drop 1/3 cup batter onto a greased baking sheet and spread evenly into a 10" circle. Bake only one or two at a time in a 300º oven for about 14 minutes or until light golden brown. (If underbaked, cookie will tear during shaping.) With a wide spatula, remove one cookie at a time from the oven.
Working quickly, flip the baked cookie onto your hand. (Use a towel or wear cotton gloves to keep the cookie from sticking to your hand). Place a fortune in the center of the cookie and fold it in half - without making a crease. Now bend the two ends toward each other and hold together for a couple minutes while the cookie becomes firm. Repeat steps until all the batter is used. Makes 6 large fortune cookies.

I made these for a cookie of the month fund raiser a few years ago - I had February. I put them in a pretty basket lined with a napkin and wrapped it all in cello - with a big pretty ribbon. It made quite the impression! I put a quote about love in each one - which I found on the internet.
They are a bit tricky to make. After the first batch burned around the edges and was raw in the middle - I sought help! A co-worker of mine recommended a Silpat. It is a silicon mat that you put on your cookie sheet. I purchased 2 new cookie sheets and 2 Silpats at Williams-Sonoma. Now my cookies are always perfectly done! Of course, those were the most expensive 1/2 dozen cookies I ever made!
