Ingredients:  
1 lb Chicken
1- 28 oz Can Tomatoes (Diced)
1 Tbsp Flour
1- 15 oz Can Garbonzo Beans
1 tsp Coriander
1 ½ Cups Water
1 tsp Cumin
½ Cup Raisins
½ tsp Cinnamon
1/3 Cup Olives
3 Cloves Garlic
¼ Cup Cilantro
1 Onion
Opt. 1-2 Cups Carrots/ Veggies
1 Tbsp Olive Oil
3 Cups Couscous or Brown Rice

Directions:
Directions:
Coat Chicken in spices & flour. Fry in Olive Oil with Onions and Carrots until tender. Simmer with rest of the ingredients for 10 minutes. Put on top of cooked couscous or brown rice. Recipe also works well in a crockpot.
P.S. you can also substitute tofu or turkey for the chicken.
