1 clove garlic, minced
1 large onion, chopped
1 c. chopped celery
(2) 6 oz. cans tomato paste
1 1/2 c. beef broth
2 1/2 qts. water
1 c. chopped cabbage
1 pkg. frozen chopped spinach
1 T. parsley
1/2 tsp. rosemary
salt & pepper
1 bay leaf
assorted vegetables of your choice - carrots, green beans, mushrooms, etc.

Combine all ingredients in large pan. Bring to boil, then lower heat until vegetables are thoroughly cooked.
