Barbecue Saucy Salmon Recipe

1 T. extra virgin olive oil
1/4 red onion, finely chopped
2 T. red wine vinegar
1/2 c. maple syrup
1 T. tomato paste
2 tsp. Worcestershire sauce
1 tsp. curry powder
2-3 drops liquid smoke
1/2 tsp. freshly ground black pepper
2 salmon fillets (6-8 oz ea)

Glaze:
Cook onion in olive oil in a small saucepan over med high heat for 3 minutes. Add vinegar and cook until reduced by half. Add syrup, tomato paste, Worcestershire, curry, liquid smoke, and pepper. Bring to a bubble and simmer.

For salmon:
Heat grill pan over med high heat. Drizzle salmon with olive oil and season with salt. Grill for 3-5 minutes and baste liberally with glaze. Flip salmon and glaze the opposite side for 3-5 minutes.

Serve with romaine salad with orange vinaigrette:
grated zest and juice of 1 navel orange
1 clove garlic, finely chopped
2 tsp. Dijon mustard
2 T. tarragon, chopped or 1 tsp. dried
1 tsp. salt
1/4 c. extra virgin olive oil
2 hearts of romaine lettuce
3 scallions, chopped
