Tomato Pesto:
1/2 stick pepperoni (1/4 lb) diced
3 T. Dijon mustard
4 cloves garlic, minced
1 T. fennel seeds
1 (7 oz) jar sun dried tomatoes packed in oil
1 1/2 c. olive oil
2 T. fresh lemon juice
salt and pepper to taste

2 lbs cooked tortellini
2 tomatoes, chopped
1-2 yellow bell peppers, chopped
1/2 c. parsley
3 T. fresh basil

Directions:
Directions:
Place all ingredients into a processor to make the tomato pesto. Toss with tortellini, tomatoes, bell pepper, parsley, and basil.
