1/2 c. olive oil
2 lbs shrimp, peeled and deveined
4 cloves garlic, thinly sliced
3 tomatoes, seeded and chopped
1 c. white cooking wine
1/2 c. lemon juice
8 oz feta cheese, broken into pieces
4 oz butter, cut
1 bunch cilantro, chopped
salt and pepper
1 lb capellini pasta

Directions:
Directions:
Put on a large pot of salted water to cook the pasta, and bring to a boil. Cook and drain the pasta. Heat oil in a large skillet or pot until lightly smoking. Add the shrimp and stir occasionally until 1/2 way cooked. Add garlic and tomatoes, and stir. Quickly add cooking wine, lemon, feta cheese, and butter. Cook until the juice reduces slightly and the butter is melted. Season very well with salt and pepper. Time the pasta so it is ready as the shrimp sauce is finished. Add hot pasta to shrimp sauce and add cilantro. Add some pasta cooking water if the sauce needs more liquid. Stir very well and serve immediately.
