1- 1/2 dozen eggs
3 c. nonfat cream
3 c. milk (non-fat to reduce calories)
1 tsp. nutmeg
1/2 tsp. pepper
1 lb. lean bacon, cut into small strips
3 pie crusts, pricked and baked half way
1/4 c. butter
1/2 zucchini
1/2 onion, chopped
2 c. Swiss cheese
2 c. mushrooms
1-1/2 Parmesan/Romano cheese

Directions:
Directions:
Pan fry the bacon, then blot with paper towel and leave it sitting to drain fat.
Look at the directions on the store bought pie crusts and bake them about half the required time, or prepare your own pie dough using flour, butter, and 6 tablespoons of ice water. Press into pie pans then prick the entire bottom of the dough so that when baking it doesn't bubble up.

Mix the dozen eggs in a bowl. add cream, milk, nutmeg, pepper, chopped onion, chopped zucchini, and chopped mushrooms, and mix very well.

Add Parmesan cheese and then cube the Swiss cheese and put about half into the mixture. Mix well.

Take the bacon and do not crumble, but layer it along the bottom of the pie crust dish. Pour the egg mixture over the top.

Bake for 1 hour at 350 degrees. Insert fork and if it comes up clean, the Quiche is complete. Sprinkle a little more Parmesan/Romano cheese over the top and dot with butter.

If you would rather have a strictly vegetarian dish, you can withhold using the bacon. This recipe will reasonably serve 24 people.
