Ingredients: 3 eggs per person (I use 1 dozen for 4 people) 1 medium onion - chopped 1 pound bacon - cooked and crumbled Bacon grease from above 1 to 2 potatoes per person cooked and halved and sliced ¼ C chopped parsley and/or chives (more or less to your taste) Salt and Pepper to taste Sour cream

Directions:Heat bacon grease in a large skillet. Add onions and cook until they start to caramelize. Add potatoes and heat through. Add cooked bacon and heat through. . Beat eggs in a bowl then add into the mixture. Add chives and/or parsley. Stir and cook eggs until just before they are done. Remove from heat – they will continue to cook for a while. Serve in a large serving dish and garnish with sour cream.
This can be assembled in a different way - as a frittata. Beat eggs with chives and/or parsley and add into a large round skillet. Cook eggs as a frittata. When cooked - slide eggs out of pan into a large serving plate. Layer the cooked potatoes (1” cubes) on top of eggs. Then layer the crumbled bacon and finally the sour cream. This is a little flashier presentation.
Most of this can be made ahead, reheated and mixed with the eggs at the last minute. This is a very elastic recipe that can be varied in countless ways. The quantities can be adjusted. This recipe makes 4 generous servings plus a little leftover.
