2 cups milk (1% is fine) or use 1 cup skim and 1 cup buttermilk
1 and ½ cups dry quick (one minute) oats
¾ cup white all purpose flour
2 and ½ teaspoon double acting baking powder
½ teaspoon salt
2 tablespoons sugar
2 eggs, well beaten
1/3 cup vegetable oil (canola, soybean, safflower, etc.)

In medium mixing bowl, combine oats and 2 cups milk. Let stand for 2 minutes.
Mix flour, baking powder, salt and sugar together then stir in oats and milk. Add the eggs and while mixing with a whisk or fork blend in oil. Mix just enough to get everything blended. Batter should be fairly runny. Ladle scant ¼ cup per pancake onto a 350 degree electric skillet or medium hot griddle. Cook until bubbles form on top and edges dry. Flip and cook until done (these cook slowly compared to regular pancakes) Serve like regular pancakes. Makes 12 six inch diameter pancakes or so. These freeze very well. Wrap individually in plastic wrap and place in freezer bag. When ready to use, microwave them for 30 seconds to partially thaw, then toast in a toaster oven (or regular toaster if you are very careful)
