2 - 6 oz boneless chicken breasts, coated in honey mustard
2 tsp. lemon juice
celtic salt and pepper to taste
pinch red chili flakes
2-3 tbsp. extra virgin olive oil

Dressing:
2 cloves garlic, chopped
3 Tbsp. extra virgin olive oil
2 tsp. fresh lemon juice
celtic salt and pepper to taste
optional: rosemary, sage, or dijon mustard added to dressing

Directions:
Directions:
Preheat broiler on high and place stainless steel or cast iron pan about 6" from heat for about 10 minutes. Rinse chicken, pat it dry and season it with lemon juice, salt and pepper. Leaving the skin on, place the breast (skin side up) on the hot pan. Cook about 7 minutes. Remove skin before serving. The breast is done when it is moist, yet its liquid runs clear when pierced. Dress with garlic, lemon juice, olive oil, and salt and pepper to taste. Add rosemary, sage or Dijon mustard to the dressing for a tasty variation.
