3 eggs
1 c. canola oil
2 1/2 c. sugar
2 c. grated zucchini, un-peeled
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1/2 tsp. salt
3 tsp. vanilla

Directions:
Directions:
Preheat over to 325 º. Combine eggs, oil, sugar, vanilla and zucchini in a bowl. Add flour, baking soda, baking powder, cinnamon, salt
(You also can add nuts and raisins if you would like.) Mix well. Pour batter into two greased loaf pans. Bake for 50 minutes to 1 hour.
Cool and remove from pan.
Freezes well.
