1 c. uncooked rice
1 lg. tomato, thinly sliced
3 med. zucchini, thinly sliced
salt
1 7 oz. can diced chiles
2 c. sour cream
12 oz. Monterey jack cheese, grated
1 t. oregano
1 t. garlic salt
1/4 c. chopped green pepper
1/4 c. chopped green onion
2 T. chopped parsley

Directions:
Directions:
Cook rice. Cook zucchini until tender crisp; set aside. In greased 9x13 dish layer cooked rice, chiles, 1/2 cheese and zucchini. Add tomatoes and sprinkle with salt. Combine green pepper, onion, sour cream, oregano and garlic salt. Spoon evenly over tomato layer. Sprinkle remaining cheese over all. Sprinkle with parsley and bake at 350 degrees for 45-50 minutes.
