2-3 medium size sweet potatoes
1/4 cup olive oil
cinnamon
1/8 cup sugar

Directions:
Directions:
Peel sweet potatoes and chop into french fry size sticks (I like mine skinny). Place in gallon Zip Loc bag. Drizzle with olive oil. Add some cinnamon and sugar. Line a cookie sheet with foil and spray with nonstick spray. Preheat oven to 375º. Spread sweet potatoes onto lined cookie sheet and place in oven. Cook for about 45 minutes or until slightly browned on the edges.

These are not fried sweet potatoes so they aren't really crispy but they are delicious and good for you.
