Ingredients: 2 tsp. olive oil 1/2 tsp. ground cumin 1/8 tsp.freshly ground black pepper 2 garlic cloves, minced 4 boneless, skinless chicken breast halves 1/2 lb tomatillos 1/2 c. fat free, less sodium chicken broth 1/4 c. cilantro leaves 1/4 c. chopped green onions 2 T. fresh lime juice 1/2 tsp. sugar 1/4 tsp. salt 1 garlic clove, chopped 1 jalapeno pepper, seeded and chopped 1/4 tsp. salt cooking spray

Directions:Preheat grill to medium high heat Combine first 4 ingredients in a ziploc bag. Add chicken to bag; seal and let stand at least 15 minutes or overnight. Discard husks and stems from tomatillos and combine with broth in a small covered saucepan and cook over med high heat for 8 minutes. Drain and cool slightly. Combine tomatillos, cilantro, and next 6 ingredients in a food processor; process until smooth. Remove chicken from bag;discard marinade. Sprinkle chicken with 1/4 tsp. salt Place on a grill rack coated with cooking spray. Grill 6 minutes each side until chicken is done. Serve with tomatillo sauce.
Chipotle Rice: Combine 1 c. rice with 2 c. chicken broth in a medium saucepan; bring to a boil. COver, reduce heat, and simmer 15 minutes or until liquid is absorbed. Stir in 1/4 c. thinly sliced green onions and 1/2 tsp. minced chipotle chiles canned in adobo sauce. |
