2 lbs ground beef
2 sm or 1 lg can sloppy joe mix
2 boxes Jiffy corn muffin mix (eggs & milk needed)
2 c shredded cheddar cheese

Directions:
Directions:
Brown the ground beef in a large skillet over medium high heat, then drain. Add sloppy joe mix, cover and reduce to a simmer for about 15 minutes, stirring occasionally. Prepare the Jiffy mix according to package directions then pour into a buttered, 9X13 casserole dish. Bake at 375º just until toothpick inserted comes out clean. Do not overbake. Pour the beef mixture over the cornbread and top with cheese. Bake at 375º until cheese is melted.
