Ingredients:
Ingredients:
1 c all purpose flour
2 eggs
1/2 c milk
1/2 c water
1/4 t salt
2 T melted butter

Directions:
Directions:
Beat flour and eggs together in a mixing bowl, slowly stirring in the milk and water, then add the salt and butter. Beat the mixture until smooth.

Heat a small non-stick frying pan on medium. Spray lightly with cooking spray. Ladle about 1/4 cup of mixture into pan and in a circular motion, tilt the pan so that the batter coats the surface evenly. The thinner the crepe the better. When crepe is lightly browned on the bottom, flip to lightly cook the other side. Each crepe will only cook about 2-3 minutes, they should be soft, not crispy. Layer wax paper between each crepe as they are cooked to prevent sticking together. To serve, fill with your choice of stuffings, roll up like a burrito, and top with your choice of toppings.

Fill crepes with anything:
SAVORY - Fill with cooked chicken or ham, cheese, veggies, then top with a cream of mushroom soup. Serve warm.
SWEET - Spread with Nutella, fill with fruit, fold into quarters and drizzle with vanilla sauce (see recipe in Sauces).

I learned to make crepes at The Savoy restaurant in Chapel Hill. I made many crepes.
