•2 pounds of beef (or lamb, or goat; cut into bite-sized pieces
• 1 medium onion
* 1 Large ripe tomato cut in wedges
*1 teaspoon smooth creamy peanut butter
*2 sweet green pepper or bell peppers
◦ 2 tablespoons vegetable oil
◦vinegar (or cider vinegar)
◦tomato, chopped
◦1 small onion, finely chopped
◦garlic, minced
◦fresh ginger, minced
◦cayenne pepper or red pepper
◦1 packet Goya Salzon seasoning (pink/orange color )

•Use a mortar and pestle or a food processor to grind together all the ingrediens except the meat and whole medium onion to make a marinade..,
. In a glass bowl mix the meat and marinade, thoroughly covering the meat. Allow the meat to marinate for at least an hour, several hours if possible.
•Place the meat (and pieces of the whole onion, and tomato wedges on skewers.
•Cook the skewered meat on an outdoor grill, or under the oven broiler. Baste with the remaining marinade, being sure that the marinade is fully cooked after the last basting.
•Serve with Rice or bread
