2 cup flour
2 cup sugar
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/2 cup vegetable oil
4 eggs beaten
3 cups grated carrots

Icing:
1 large pkg cream cheese (8 oz)
1 box powdered sugar
1/2 cup chopped nuts
1 stick butter
1 tbsp vanilla

Directions:
Directions:
Sift all dry ingredients. Add oil and eggs. MIx well. Add grated carrots. Bake in greased and floured pans (3 of them) for 30 minutes in a preheated 350 degree oven.

For Icing:
MIx all ingredients until fluffy. This can also be made in one large sheet pan or cupcakes. Adjust baking times accordingly.
