1 !/2 c. rice
1/2-1 c. cooked millet
1/2 tsp. salt
3 c. water
2 c. coconut milk
1 c. sugar
fresh fruit such as strawberries, mango or banana

Directions:
Directions:
Bring rice to a boil. Reduce heat, cover and let cook for 15-20 minutes. Stir in cooked millet if water is absorbed. Combine coconut milk, salt, and sugar. Spread rice mixture on shallow serving platter and pour half of coconut milk mixture over it. Can be chilled at this point. At serving time, pour remaining coconut milk mixture over rice, and top with sliced fresh fruit. Serve chilled or at room temp.
