2 c. finely grated carrots
3 c. flour
2 c. sugar
4 eggs
3 tsp. baking powder
2 tsp. soda
2 tsp. cinnamon
1 1/2 c. oil
1/2 tsp. salt
1 c. chopped pecans

Directions:
Directions:
Mix sugar and oil well. Add carrots. Add eggs one at a time. Add dry ingredients and pecans. Mix well. Bake in 3 8" pans, tube pan or loaf pan. Bake at 325 degrees for 40-45 minutes. Baking time depends on type of pan. Check for doneness accordingly. If frosting is desired, cream cheese frosting is good on this cake.
