MEAT FILLING:
18 Manicotti noodles
1 1/2 lbs ground beef
2 tbsp vegetable oil
3 slices bread, crumbled
2/3 cup milk
1 egg, beaten
2 cups grated mozzarella cheese
1 tbsp chopped parsley
1/2 tsp salt
dash pepper
28 oz spaghetti sauce
1/4 cup grated Parmesan cheese

CHEESE FILLING:
18 Manicotti noodles
3 cups ricotta cheese or cottage cheese
2 cups grated mozzarella cheese
1/2 cup Parmesan cheese
1 tbsp chopped parsley
2 eggs, beaten
dash nutmeg
1/2 tsp salt
dash pepper
28 oz spaghetti sauce
1/4 cup Parmesan cheese

Directions:
Directions:
Cook manicotti in large amount of boiling water - about 4 quarts. Add 1 tbsp veg oil and 1 tbsp salt if desired. Cook 9 at a time for 6 min - until barely tender. Do not overcook, or manicotti will tear when filling. Drain in a colander. Fill each with prepared Meat filling or Cheese filling, using small spoon. Divide 1 1/2 cups spaghetti sauce in bottom of two 9" X 13" pans. Arrange 9 filled manicotti in each pan in a single layer. Pour over remaining sauce. Divide the Parmesan cheese in half and sprinkle on top. Bake covered 45 minutes or until thoroughtly heated.

MEAT FILLING:
Cook noodles as above. Brown meat in oil in frying pan; drain. Combine bread and milk. Allow to stand 2 min. Add cooked meat and remaining ingredients except spaghetti sauce and 1/4 cup Parmesan cheese. Fill noodles and complete as instructions above.

CHEESE FILLING:
Cook noodles as above. Combine all filling ingredients except spaghetti sauce and 1/4 cup Parmesan cheese. Fill cooked noodles and complete as above.
