Pre-made Chocolate Cookie Crust (Oreo)
32 large marshmallows
1/2 cup milk
1 tsp. vanilla
1/8 tsp. salt
6 drops peppermint extract
6 drops red or green food color
1 1/2 cups whipping cream
2 T. crushed hard peppermint candies

Heat marshmallows and milk in 3-quart saucepan over low, stirring constantly, just until melted; remove from heat. Stir in vanilla, salt, peppermint and food color. Refrigerate about 20 mins, stirring occasionally till mixture mounds when dropped from spoon.
Beat whip cream in chilled, medium bowl until stiff. Fold marshmallows mixture into whip cream. Mound into crust. Refrigerate at least 12 hours. Just before serving, sprinkle with crushed candies. Serve with whipped cream if desired.

This is a great Christmas/ holiday dessert. The marshmallow base can be used for other flavors, substitute almond extract & sprinkle with almonds and numerous combos.
