3 c. bran cereal (original)
1 c. boiling water
1/2 c. oil
2 1/2 c. flour
2 1/2 t. baking soda
1 t. salt
1 1/2 c. sugar
2 eggs
2 c. buttermilk

Directions:
Directions:
Preheat oven to 400 degrees. Grease muffin cups. Combine 1 c. bran with boiling water. Cool. Add oil. Combine beaten eggs and buttermilk. Add sugar, salt and baking soda. Mix well. Add flour and mix well. Stir in remaining bran and first bran mixture. Spoon mixture into muffin pans and bake 20 minutes. Make be baked immediately or refrigerated up to 3 weeks. Recipe can be doubled.
