2 c flour
2 t baking powder
1 1/2 t soda
1 1/2 t salt
2 t cinnamon
2 c sugar
1 1/2 c salad oil
4 eggs
2 c finely grated carrots
1 8 1/2 oz can crushed pineapple - drained
1/2 c chopped nuts
1/2 c flaked coconut

Frosting:
1 3oz package cream cheese
3/4 stick margarine or butter
1 t vanilla
3 c powdered sugar
1 t milk

Directions:
Directions:
Combine flour, baking powder, soda, salt & cinnamon. Add oil, eggs, sugar & mix well.
Add carrots, pineapple, nuts & coconut. Blend well. Pour into 9X13 cake pan that has been well greased & floured. Bake 40 - 50 minutes at 350º

Make frosting & spread on cooled cake.
