1 large cucumber
2 tablespoons fresh dill or 5 teaspoons dry dill
1/2 - 1 teaspoon sea salt or salt
1 tablespoon fresh lemon juice
1/3 cup safflower oil (can substitute olive oil)

Directions:
Directions:
I used both oils. Olive Oil makes it even creamier. Used extra dill and extra lemon. Made one mason jar. Peel and chop cucumber. Put everything in a blender and puree. Great fresh or chilled. Good on salads, vegetables, fish. Refrigerate for about one day, put rest in ice cube trays, freeze, then store in freezer.
