1/4 c. chopped onion
6 Tbsp. butter
6 Tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. Dijon mustard
1 can chicken or vegetable broth
2 C. cooked wild rice (1/2 c. raw)
1- 4oz. can of sliced mushrooms
1/4 c. sherry
1 c. Half and Half

Directions:
Directions:
Saute onion in butter. Stir in flour, salt, pepper and mustard. Cover and cook over low heat until mixture is bubbly. Gradually, add chicken broth, heat until boiling, stirring constantly. Boil and stir one minute. Stir in wild rice, mushrooms, sherry and Half & Half. Heat thoroughly. DO NOT BOIL. Serves 4
Preparing rice: Thoroughly wash 1/2 c. wild rice. Place in a heavy saucepan with 2 1/4 c. water. Bring to a boil. Simmer covered for 30 min. Drain any excess liquid.
