Pineapple Filled Cookies Recipe

1 Cup Shortening
2 eggs
12 tsp salt
2 cups brown sugar
3 1/2 cups sifted flour
1 tsp soda
1 tsp Vanilla
1 tsp Cream of tarter
1 cup sugar
3 TLB flour
1 Cup chopped nuts
1 Small can Crushed Pineapple
2 TLB lemon Juice

Cookies: Cream shortening, sugar and vanilla. Add eggs and beat until fluffy. Sift flour, salt, soda and cream of tarter and add to shortening mixture. Shape into two long rolls and chill.

Filling: Mix sugar and flour, add pineapple and lemon juice, cook until thick, stirring constantly. Add nuts. Let cool. When ready to bake cookies, crumble 1/2 of the dough into cake pan (Jelly roll pan). Press dough firmly with fork. Pour filling over this ...then crumble the remaining dough on top. Bake at 375 until lightly browned. When cool, cut in squares and serve.
