5 cups Great Northern Beans, cooked
1 lb. boneless chicken breast
1 onion, chopped
1 rib celery, chopped
1 4-oz. can mild green chilies, chopped
2 cloves garlic, minced
1 tbsp. olive oil
3 cups chicken stock or canned broth
1 1/2 tsp. dried oregano, crumbled
1 tsp. ground cumin
1 1/2 cups Monterey Jack cheese
1/8 tsp. cayenne pepper
1/4 tsp. black pepper
1/4 tsp. white pepper
salt to taste
1/8 tsp. ground cloves
chopped fresh cilantro, optional
sour cream, optional
salsa, optional

Directions:
Directions:
Simmer chicken in large pot about 5 minutes. Drain, cool, remove skin, cube. Heat oil in same pot over medium high heat and saute onions until translucent. Stir in garlic, chilies, cumin, oregano, cloves, salt and peppers (red, black & white) and saute 2 minutes. Add beans, chicken and stock; bring to a boil and reduce heat. Simmer 2 hours. Add 1 cup of cheese. Garnish and serve.
