Chinese Fried Rice Recipe

1/4 c salad oil
1 c white rice
1 envelope chicken noodle soup mix
2 1/2 c boiling water
2 eggs, slightly beaten
1/4 tsp salt
few grains pepper
1 1/2 T soy sauce
2 green onions, sliced

Directions:
Directions:
In a large skillet, heat 2 T oil and saute dry rice until golden brown. Combine soup mix and water, stir into rice. Cover and simmer 30 minutes, or until liquid is absorbed. In another skillet, heat remaining oil. Add eggs, stirring constantly and cook 1-2 minutes. Add salt, pepper, green onions and soy sauce. Stir eggs into soup-rice mixture and heat 2-3 minutes.
