1 cup plus 1 tablespoon flour
2 teaspoon baking powder
1 teaspoon baking soda
1 1/4 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup rolled oats
1 ripe banana
1 1/2 cups soy milk (though any milk, including cow, will do)
3 tablespoons maple syrup (or sweetener)
3 tablespoons vegetable oil
3/4 cup raisins
Extra sliced bananas for the top

Directions:

Preheat waffle iron. In a mixing bowl mix flour, baking powder, baking soda, cinnamon, nutmeg and salt and oats. In a separate bowl, mash the banana well. Add milk, maple syrup, oil, and raisins and mix well. Add wet ingredients to the dry and mix just until combined. Let batter sit for 2 minutes before making waffles (this allows the oatmeal to get moist and blend with the rest of the batter.) Prepare the waffles according to the manufacturer's directions. Serve with butter, maple and sliced bananas, or for less sugar top with bananas and warm applesauce.
