5 large eggs
1 1/2 c heavy cream
pinch of salt
pinch of white pepper
1/8 tsp nutmeg
1/4 tsp paprika

filling:
8 oz frozen spinach, thawed
1 small can sliced/chopped mushrooms
9" pie shell

Directions:
Directions:
Pre bake pie shell until golden brown.

Preheat oven 350º. Blend custard ingredients.

Thaw spinach and drain. Squeeze out excess moisture. Place spinach on bottom of pie shell. Drain mushrooms and spread over spinach.

Pour custard over pie shell. Bake 20-25 min or until filling is no longer liquid and is well set.
