BONELESS Roast Beef - can use sirloin tip, top round, bottom round (my favorite), or rolled roast.

Directions:
Directions:
Preheat oven to 500º. Place roast in low, oblong pan. Do not cover. Cook for 5 minutes per pound for rare, 6 minutes per pound for medium, or 7 minutes per pound for well done roast. Turn oven off when time is up. Leave beef in oven for 2 hours without opening the door.

Don't try this the first time when company is coming - some ovens are not as hot as others which can affect the results. Once you find the correct amount of time for your oven, then enjoy cocktails for the 2 hours!
