2 med.-large sweet potatoes
2 T. butter
1 T. plain flour
¼" slice of fresh ginger
1½ c. vegetable broth
1 T. brown sugar
1 cinnamon stick
1 c. milk

Directions:
Peel and cube sweet potatoes, cook until tender. Drain (can use liquid later, if desired). Set potatoes aside. In large sauce pan over med. heat, melt butter. Whisk in flour and ginger slice. Cook and stir until flour has turned golden brown, 2-3 min. Whisk in vegetable broth (can use liquid from cooking), brown sugar, nutmeg, and cinnamon stick. Bring to simmer on med-high heat, whisking constantly, then reduce to med-low; simmer 10 min. Add the sweet potatoes and simmer 5 min longer. Remove and discard cinnamon stick and ginger. Spoon mixture into blender, filling no more than halfway. Hold down top and blend carefully until all pureed. Pour into clean pot, whisk in milk and cook over low heat until hot.

This is a good, hearty soup for a cold day. Not overly sweet but very tasty if you like sweet potatoes, which is one of my favorites. You can substitute skim milk for reduced calories. Similar in taste to Pumpkin Soup and Butternut Squash Soup.
