1 pound dried small white beans
8 cups water
1 meaty ham bone or 3-4 ham shanks
1 onion, finely sliced
1 cup finely chopped celery
1 teaspoon dried parsley
1 teaspoon salt
1/4 teaspoon pepper
1 bay leaf

Directions:
Directions:
In a large pan, heat the beans in water and boil gently for two minutes, Then, turn off the heat and let the mixture stand for one hour. Pour into a crock pot. Add remaining ingredients. Cover and cook on low for 12 to 14 hours or until beans are very soft and smooth. Remove bay leaf and ham bone. Cut meat off bone and add to the pot. Serve hot.
