Purchase family pack of fresh, small chicken wings. With a steak knife, cut into three pieces. Keep the wing section and drummies only.

For each pound of chicken wings mix the following marinade (I quadruple recipe for 5 lbs. of wings).

1/4 cup soy sauce
1/4 cup white sugar
1/2 teaspoon garlic powder

Sauce:
1/2 cup dark brown sugar and 1/4 cup soy sauce (optional)
1 teaspoon ground ginger
2 tablespoon ketchup

Prepare wings. Mix marinade in a bowl. Pour over wings and marinate in refrigerator overnight. Turn wings occasionally. Drain marinade into a pan to simmer while wings are baking in oven (see below for more details).

To Cook Wings: Place wings in a single layer on a cookie sheet with sides that has been covered with aluminum foil and sprayed. Bake wings for 2 plus hours at 350º. Turn wings and drain off fat about every 30 minutes.

Back to the Sauce: Simmer sauce for one hour or more. Mix in 1/2 cup brown sugar. Add 1/4 cup more of soy sauce if needed for a barbeque sauce consistency. Coat chicken wings the last 15 minutes with the sauce. Serve in a crock pot.

Marinate wings in extra large Ziploc bags work or large, covered jars. Cooked wings freeze well if made in advance. I make 10 lbs. of wings for the family Christmas party each year and they are always gone.
