6 oz cream cheese, softened
1 lg cucumber, peeled, seeds removed
4 t mayonnaise
6 green onions, diced
salt & pepper to taste
white bread

Garnish for Christmas: parsley and pimento

Directions:
Directions:
Dice cucumbers and chop to a pulp. Drain on paper towels. Mix all ingredients well.
Spread mixture on slice of bread. Top with another slice. Trim off crusts. Cut diagonally into fourths.

For Christmas: Cut circles from slices of bread using cookie or biscuit cutter. Spread mixture on circle of bread. Top with chopped parsley, arranging on outside of circle as a wreath shape. Add a couple of cut pimento pieces as your holly berries.
