Dressing:
1 cup mayonnaise
1/2 cup sour cream
1/4 cup whole milk; more as needed
6oz. crumbled blue cheese, your choice
2Tbs. finely grated shallot
1-2 cloves finely grated garlic
1Tbs. fresh lemon juice
1/2 tsp. kosher salt
freshly ground pepper to taste

Salad:
2-3 hearts of romaine lettuce, bases trimmed but left intact, halved lengthwise
Extra-virgin olive oil

Directions:
Directions:
In a small bowl mix dressing ingredient's together, set aside or refrigerate until ready to use. If refrigerated, set out 30 minutes before serving.
Heat grill or grill pan. Brush hearts of romaine with olive oil and grill face down for 1-2 minutes. Remove from grill and top with dressing. You may add chopped tomatos or crumbled bacon if desired.
