4 pounds dark brown sugar
2 #10 cans ketchup
12 ounces Dijon mustard
3 cups apple cider vinager
5 tablespoons garlic powder
5 tablespoons onion powder
2 tablespoons salt
5 tablespoons paprika
2 tablespoons white pepper
2 tablespoons cumin
2 pounds bacon
4 2-ounce tubes anchovy paste
3 5-ounce bottles Habanero peppers*

Cook the bacon and save the drippings. Mix all the ingredients, except the cooked bacon, in a large pot. Over low heat, simmer until the mixture starts to bubble. Pour a cup of the sauce into a blender with the cooked bacon. Puree until there are no noticable bacon pieces. Add bacon mixture to simmering sauce and cook for 30 more minutes. It is best to can the sauce while hot.
