1.5 cups vinegar
3 cups apple cider
3 bay leaves
3 onions, chopped
1 tsp ground cloves
1 tsp cinnamon
1 tsp pepper
1 tsp ginger
ROASTING:
5-6 pound rump or cross cut chuck roast
1/2 cup chopped onion
1.5 cups strained marinade
1 cup beef broth
1 tsp ginger
1 cup tomato juice
2/3 cup red wine
salt and pepper
1/4 cup honey
flour

Directions:
Directions:
Prepare marinade; marinate beef for 3-4 days in refrigerator, turning several times a day, adding additional vinegar and water so meat is covered. Remove meat, wipe dry and sear in hot oil. Add onions and cook 2 minutes. Boil marinade 10 minutes; strain 1.5 cups of marinade onto the meat. Add remaining ingredients; cover and simmer for 3 hours or until tender over low heat or in a 275º oven. Strain juices and thicken with flour. Serve with noodles, mashed potatoes, or potato pancakes.
