2 1/2c sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
4 egg whites (at room temp)
1/2 c.soft butter or margarine
1 1/2 c. sugar
1 c. milk
1 1/2 tsp. rose water or almond extract

Directions:
Directions:
Preheat oven to 350º.
Lightly grease and flour pans.
Sift flour with baking powder and salt. Set aside.
In small bowl of electric mixer, set at medium speed, beat egg whites until foamy throughout. Gradually add 1/2 c. sugar, beating well after each addition. Continue to beat until soft peaks form when beater is slowly raised.
In large bowl at high speed, cream butter with remaining sugar, until light and fluffy. At low speed alternating flour mixture by 1/4 c, and milk by 1/3 c, beginning and ending with flour. then add egg whites and extract, beat for 1 minute.
bake at 350º for 1/2 to 3/4 hour.

I have many memories of helping bake this cake with Mom when I was younger.
She made and decorated many wedding cakes. It was always fun to be able to eat the left over frosting when she was done decorating and delivering the cake.
