1 c. dried couscous, cooked & cooled 3/4 c. Feta cheese (crumbled or cubed) 1/3 c. olive oil 1/4 c. lemon juice 2 tbsp oregano Salt & pepper to taste Optional: 1/4 c. sliced olives 1/4 c. onion, chopped 1/4 c. grape tomatoes, sliced 1/4 c. green pepper, chopped
Place couscous in med. size bowl. Stir in remaining ingredients. Season with salt & pepper. Serve chilled or at room temperature. Store in fridge.
