Ingredients: -1 large zucchini grated. Should be 2 -3 cups. Remove excess water from zucchini by squeezing grated zucchini between paper towels. -1/2 cup grated Parmesan Cheese -1 cup panko bread crumbs (regular works as well) -1/4 tsp paprika -1 clove of garlic minced -1 egg -salt & pepper to taste -2-3 tablespoons of cooking oil or olive oil

Directions:-Combine all ingredients except oil in a bowl & mix. Using heaping tablespoons form the mixture into at least 8 patties.
-Heat oil in pan over medium high heat. Add patties and cook on each side until golden brown. Should take 3-4 minutes per side. Serve warm with marinara sauce or sour cream. (I shred zucchini in the summer into 2 cup servings per bag & just thaw & squeeze out moisture-tastes just the same as fresh) |

Notes: These look almost like a crab cake. When making for a party, I cook partially and then just "reheat" for a minute or two all of the patties at the last minute in a pan.
