1 pkg corn tortillas (toast over heat in dry pan or directly on to stovetop, flip when bubbly)
cabbage
1 package breaded shrimp (or fish sticks)
1 jar of pineapple salsa (or any fruity salsa)
White sauce (ingredients below)

Directions:

White sauce (I like it to sit for at least 30 minutes):
1 cup mayonnaise
1 cup greek yogurt
juice of 1 or 2 limes
tsp cumin
tsp dill
tsp oregano

Other prep:
Make white sauce
Preheat oven for shrimp/fish sticks
Shred cabbage (if you can, get angel hair shred)
Bake shrimp-fish sticks (I usually go over recommended time for them to be crispy)
Toast corn tortillas over heat in dry pan or directly on to stovetop, flip when bubbly. Store in towel or tortilla holder (I usually do 10 at a time so they are fresh)

To put it all together:
Take a tortilla
1 tsp white sauce
3-4 shrimp
shredded cabbage
1 tsp pineapple salsa
Fold and enjoy!

I've taken them to work for lunch before, but need to separate all components and put it together, snack-size ziptop bags are good for that.
