1 (1lb. 2.25 oz.) Betty Crocker Lemon Cake Mix
1 (3.4 oz.) package Jello instant lemon pudding mix
4 eggs
3/4 cup vegetable oil
3/4 cup water

Lemon Icing
1 cups powdered sugar
1/4 cup lemon juice
1 tbsp. melted butter
1 tsp. lemon zest

Combine all ingredients. Mix until smooth.

Combine yellow cake mix and pudding mix with eggs, oil and water. Mix with beaters a few minutes until smooth. Pour into nonstick bundt pan. Bake at 350 for 35-40 minutes or until tester comes out clean.
Remove from oven and let sit, but while still warm turn over pan onto a plate. Pierce surface of cake with a fork and pour lemon icing slowly and evenly over cake. Let cool.

I know, I know, it's a mix, and the only one I've ever made. I started making it a couple of years ago and everyone requests it. It's great when you don't have a lot of time.
