1/4 cup unsweetened applesauce
1/4 cup canola or vegetable oil
1/2 cup brown sugar (I use Splenda brown sugar)
3 eggs
2 cups mashed banana (approx 4 VERY ripe bananas)
1 tsp salt
2 cups whole wheat pastry flour
1 tsp baking soda
1 tsp vanilla
Optional: chopped walnuts and/or mini chocolate chips

Directions:
Directions:
Heat oven to 325 degrees. Spray 2 small loaf pans or 1 large loaf pan with spray oil. Cream oil, applesauce and brown sugar together until well mixed. Add eggs and mix. Add mashed bananas and mix (using super ripe-black- bananas is the key to moist bread). Combine salt, flour and baking soda together and add slowly to banana mixture and stir just until combined. Don't over mix. Stir in vanilla and nuts/chocolate chips if desired. Bake about 45-60 minutes until knife inserted in the center of loaf comes out almost clean. (I leave it a tiny bit gooey for moistness). Don't overbake!

Most banana bread recipes have tons of fat and sugar. Our family loves this guilt-free version which we eat with relish and still feel virtuous. (Relish is optional :)
