7-8 lb brisket
1 lg onion cut in quarters
4 cloves garlic
1/4 cup fresh parsley
2 stalks celery
2 carrots
1 bay leaf
8 oz tomato sauce
1 cup dry red wine
beef broth to cover
1 T salt
1/4 t white pepper
1 T potato starch

Directions:
Directions:
1.preheat oven to300º place on a rack
2.Place onion,garlic and parsley in work bowl and chop for 5 min. Distribute over meat and place celery,carrot's and bay leaf around brisket.
3.Process tomato sauce, wine,salt and pepper and beef broth for 30 sec. and pour over.
cover and roast for 4-5 hours. Remove when tender and separate from liquid.
4.Work liquid and vegetables in process for 10 sec.
5. Slice brisket and place in baking dish and cover with gravy then heat for 30 min at 350º.
