2 cups sugar
1 cup vegetable oil
3 eggs, slightly beaten
2 cups from "A-Z" ingredients from list (see below)
1 tbsp. vanilla
3 cups flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup chopped walnuts (optional)

A to Z Ingredient List

Apples, peeled and shredded
Applesauce
Apricots (dried, chopped)
Bananas, mashed
Blueberries
Carrots, shredded
Coconut
Dates, pitted and chopped
Figs, dried and chopped
Grapes, seedless, chopped
Oranges, peeled and chopped
Peaches, peeled and chopped
Pears, peeled and chopped
Pineapple, canned, crushed and drained
Plums (dried, pitted and chopped)
Pumpkin, canned
Raisins
Raspberries, unsweetened, fresh or frozen
Rhubarb, chopped fresh or frozen
Strawberries, fresh or frozen
Sweet potatoes, cooked and mashed
Zucchini, peeled and grated

Directions:
In mixing bowl, combine sugar, oil and eggs and mix well. Stir in the 2 cups of A-Z ingredients of your choice and vanilla.

Combine flour, cinnamon, baking powder, baking soda and salt; stir into liquid ingredients just until moistened. Stir in nuts if desired. Pour into two greased 8 x 4" loaf pans.

Bake at 325 degrees for 55-65 minutes or until wooden pick inserted in the middle comes out clean. Cool in pan 10 minutes before removing to wire rack. You can also make into mini loaves or muffins; just reduce the cooking time.

This recipe was given to me when we were visiting the Amish community in the hills of Kentucky. The lady that shared the recipe was not Amish, but we enjoyed the community together and had fun sharing recipes.
