Directions:
Heat oven to 400º
Slice eggplant and sprinkle with sea salt to remove the moisture from the eggplant. Let this sit for 30 minutes. Dab the eggplant with a paper towel to pick up the released moisture.
Combine both crumbs and mix well. Place in dish.
Dip eggplant in egg, then in bred crumbs. Place in a single layer on a baking sheet that has been oiled or sprayed to avoid sticking. Bake in preheated oven for 10 minutes each side or until lightly browned. In a greased 9' x 13' baking dish, spread some spaghetti sauce to cover all of the bottom. Arrange a layer of eggplant slices in the sauce. Sprinkle with a combination of all 3 cheeses. Repeat with remaining ingredients and end with the cheeses. Sprinkle the top with basil and pepper.
Bake uncovered, in 350º oven for 40 minutes or until bubbling and golden brown.

Personal Notes:
This a such a healthy and delicious version of the typical "fried" eggplant parm. I think you will enjoy this. You can also use heart healthy sauce and low fat cheeses.
