Ingredients: 3 eggplant,sliced 1/4 " thick Sea Salt 3/4 c egg whites 1 1/2 c Panko crumbs 1/2 c seasoned bread crumbs 6 1/2 cups spaghetti sauce 8 oz. shredded mozzarella cheese 8 oz. shredded cheddar 1/2 c Parmesan cheese 1 t. dried basil salt and pepper to taste

Directions:Heat oven to 400º Slice eggplant and sprinkle with sea salt to remove the moisture from the eggplant. Let this sit for 30 minutes. Dab the eggplant with a paper towel to pick up the released moisture. Combine both crumbs and mix well. Place in dish. Dip eggplant in egg, then in bred crumbs. Place in a single layer on a baking sheet that has been oiled or sprayed to avoid sticking. Bake in preheated oven for 10 minutes each side or until lightly browned. In a greased 9' x 13' baking dish, spread some spaghetti sauce to cover all of the bottom. Arrange a layer of eggplant slices in the sauce. Sprinkle with a combination of all 3 cheeses. Repeat with remaining ingredients and end with the cheeses. Sprinkle the top with basil and pepper. Bake uncovered, in 350º oven for 40 minutes or until bubbling and golden brown. |

Notes: This a such a healthy and delicious version of the typical "fried" eggplant parm. I think you will enjoy this. You can also use heart healthy sauce and low fat cheeses.
