½ pound rock fish
ripe avocado
1 Tbsp half-n-half
½ tsp rice vinegar
1 egg
wine (optional)
veggie stock, optional
salt and pepper to taste

Directions:
Directions:
Puree avocado, half-n-half, rice vinegar, salt and pepper in food processor until smooth (wipe down sides).
With processor running, add egg and puree.
In a oiled flat pan or pie plate, add a little wine and veggie stock.
Lay fish in the pan and cover with mousse.
Bake in preheated 450 degree oven for 8 – 10 minutes.
