1 Large Butternut Squash
2 tbsp. Butter
1 tsp. Black Pepper

Directions:
Directions:
Cut Squash in half and scoop out guts. Place skin side up in deep baking pan filled with water (you do not need water to cover squash). Cover with aluminum foil and bake at 350º for about 30 minutes or until you can easily fork squash.

Remove squash from water and let cool until easy to handle. Scoop out warm squash getting as close to skin as possible and put in large mixing bowl. Just add butter, pepper and mash until consistency is like mashed potatoes.
